    OVERVIEW

    Gary Taubes’ Why We Get Fat and What to do About it addresses the main culprit responsible for people putting on too much weight, carbohydrate consumption. It also suggests the way to slim down, which is to simply stop eating carbohydrates.

    The world’s diet has changed since agricultural production began 10,000 years ago, shifting from a diet of mostly meat to a diet heavy on carbohydrates, particularly grains and grain products. People began consuming even more carbohydrates in the form of sugars about 200 years ago, and that trend has become even more pronounced. The result is that carbohydrates are dominating the world diet.

    Unlike meat and fat, carbohydrates pump too much sugar, or glucose, into the bloodstream.  That sugar overload is bad for the body, so the pancreas produces the hormone insulin to address the imbalance. Insulin sends some glucose to muscles and other tissue to be used as fuel, as well as some to fat cells. If there is too much glucose for fat cells to use as fuel, the
