1.1 Study plan
We're going to speak about main wine terms and some facts of wine history, a little bit about grape varieties. And we'll explain the process of winemaking and five main features of wine. I show you how to taste wine correctly: eye-nose-mouth and how to serve wine, what glasses to use, what temperature, how to aerate the wine, and how to storage wine.
In all chapters, you may see pictures from our wine tastings. I used them to create the atmosphere of the real wine tasting. So, all this information we need only for one reason. We need to drink good wines, so we need to know how to choose them. That's why we need to learn something about grape varieties, countries, styles, and wine labels.
1.2 Wine terms and history
Here we’ll discuss some essential wine terms. All wines can be divided into 2 main groups: still wine and sparkling wine, sparkling wines are those with bottles, fortified wine is the type of dessert wine, is not necessarily sweet. It might be dry. For example, Jerez or Sherry from Spain.
We would like you to understand the difference between winery and vineyard. Winery is a producer. It's an estate where wine is made. Vineyard is a place, a part of land where they grow vines with grape. So, appellation or region is the most important information about the wine. So, the region the wine comes from tells you a lot about the wine, it is taste, its style, its quality.
Grape variety: wine can be made from one grape variety, but for example, Merlot or Cabernet Sauvignon, could be a blend up to ten grape varieties in one bottle. So vintage or year it's a date, its a year of harvesting wine. So, on the counter label or on the back label of your bottle, you might find another date. Date when wine was bottled. you are not interested very much in that date. You're interested in vintage.
Wine aging is the most important processes in making wine. So aging gives wine a structure and tannins is the red wine. Aging helps to make wine dense and elegant and intense. in oak barrels or can be in in bottles. Unoaked wine is the wine without aging. The cork and screw cap, we are you going to discuss them. So basically, those are closures for wine.
Oenology is the science about growing wine not making in terms of production in winery but in vineyards. How to grow perfect grape. Sommelier is a person who is an expert in wine. Well, historically, Sommelier was the person in the restaurant who was for buying good wines and I'm choosing them for guests? So, if you call your friend, who is good at wines a sommelier -it's not correct. Better call him experts or Wine geek and cavist is the person who sells wine in a special specialized shops in wine shops. So, let's have a look at milestones of wine history. First mentions of wine came from China, it was rice wine. So not only coronavirus come from China. First winery was found in Armenian 4110 before Christ. In ancient Greece wine was important part of everyday life and especially feasts and celebrations. Greek word symposium means philosophical talk with wine.
When you're having a party with your friends with wine -you're at a symposium. Main thing I want you to understand about drinking wine at those time that wine was the source of drinking water for people. There were no filters, no sanitizers, no Bon Aqua. So, people needed to find the source of drinkable water. And it was wine.
In ancient Greece, people used to blend water with wine. So, a mixture of water and wine just to sanitize the water and make it drinkable. There is still a proverb that you drink wine like a barbarian
. That means that you drink wine without mixing it with water. Jesus came and he turned into wine. Unfortunately, not everyday basis, only on special occasions and weddings, but it's still the same idea that he gave a miracle - he gave people drinking water in the shape of wine. Monks played vital role in all wine making industry. In 1520 first grape was planted in New World in California. brought by first colonizers. In 1535 sparkling wine appeared, occasionally by chance. Very interesting story, I'll tell you next time. There was a very sad and gloomy period in history at the end of the 19th century. It was epidemic of phylloxera. It's a small insect that eats the roots of the vine and destroys it, destroys them.
This insect was brought from America occasionally, not on purpose to France, and to Italy, and Spain, and almost 75% of all vineyards were destroyed. So, it was panic. It was pandemic. The solution came also from the United States, and it was grafting the European grape vine onto American root stock. So, they took roots from America vines, and it will and make a hybrid with the European vines.
When you hear people saying that in the old world we have better vineyards, better vines because of the history and so on and so forth. And what happened: he, is being an American, he has a particular taste in red wines, especially. So, he liked mostly (he likes) fruity wines like hose fruit bombs. So, the American style of red wine and as his opinion is very important, very, very evaluated
The winemakers are starting to make wine in the way Robert Parker should like. So, his opinion and opinion of all the wine critics, they change the industry. So, industry is trying to make wines in the taste of ten people. So, is it good or is it bad for the industry? We're goanna find out, I
