    ROAST:

    Balsamic Glazed Roast Vegetables

    Preparation Time: 15 minutes

    Total Time: 1 hour

    INGREDIENTS:

    4 cups mixed vegetables (e.g., carrots, potatoes, bell peppers), cut into chunks

    2 tbsp olive oil

    3 tbsp balsamic vinegar

    2 cloves garlic, minced

    1 tsp dried thyme

    Salt and pepper to taste

    INSTRUCTIONS:

    Set the oven's temperature to 400°F (200°C).

    Olive oil, balsamic vinegar, minced garlic, dried thyme, salt, and pepper should be combined with the vegetables in a bowl.

    On a baking sheet, arrange the vegetables in a single layer.

    Stirring occasionally, roast in the oven for 45 to 50 minutes, or until the vegetables are soft and caramelized.

    Serve alongside rice or both.
