Greetings, salutations, hello and welcome! I’m so glad you’re here, friend. We are about to do a lot of blending together.
This book is about combining wholesome plant-based foods with the power of a Vitamix and ending up with delicious vegan, gluten-free recipes. But it’s also more than that. I wrote this book with the intention of bringing all my different food-based passions together, and I hope you can feel that! I am passionate about food because it reminds me to be curious, creative, adventurous, patient and in touch with my body, mind and spirit. Food connects us to each other and our planet. In these pages, you’re going to find recipes that are accessible and fun to make, recipes that you and your whole family can enjoy and recipes that might just make you see the versatility of fruits and vegetables in a totally new light.
Simply put, this is more than just a smoothie cookbook.
Yes, there is a smoothie chapter, but we are going way beyond that. When you start with a powerful blender and high-quality ingredients, you can make almost anything. The Vitamix is the best blender in the world, by far. I’ve tried a ton of different high-quality blenders, and none have ever come close to the Vitamix. With this one appliance, we will be creating drinks, snacks, soups, lasagna, quiche, baked treats, sauces, nut butters, plant-based milks and more! Rest assured, the recipes in this book will leave you satisfied and excited to keep exploring what else you can do with your high-speed blender.
My recipes focus on rich flavors and simple ingredients. They are fairly easy and quick to make, but they look and taste more impressive than you’d expect. They are highly nutritious, but you won’t feel like you’re giving anything up by eating healthy
dishes. Choosing to make and eat vegan, gluten-free food does not have to feel restrictive or lacking! Whether you eat this way for personal, ethical or health reasons, because you are cooking for someone else who eats plant-based or gluten-free, whether this is a new way of eating for you, or you’re already a rock star, everyone can find drinks, snacks, entrees and desserts in here that will tantalize the senses.
More than anything else, I hope these recipes bring you joy.
How to Use This Book
Techniques
I am easygoing when it comes to cooking. I like to go with my gut, follow my intuition and am always open to changing a recipe to suit my own needs and preferences in the moment. Don’t worry about following every exact instruction or getting too caught up in measurements and weights. Obviously we need to be specific and calculated to a degree, or else our food will taste weird, get burnt or fall apart. But generally speaking, do what feels right! Environmental differences like humidity and temperature make everyone’s kitchen a unique space. Ingredients like flour vary in dryness and grain size. Organics like fruits and vegetables are always slightly different sizes. So no matter what, your recipe will turn out a bit different than mine. That’s part of the fun! Feel free to adjust recipes as you see fit. Maybe that means adding a little more olive oil. Maybe that means using a little less tomato sauce. Perhaps it means adding fresh rosemary from your garden. You’re the chef! If you don’t trust yourself in the kitchen, this is a great way to learn how. If you’re already a seasoned pro, you know what I’m talkin’ about.
Some notes on using the Vitamix:
• You need patience for some recipes. Especially with nut butters, it’s gonna seem like the nuts will never get there. But take your time, take breaks to let the blender cool, and you will end up with a magically creamy result.
• To get an evenly blended result, scrape down the sides of the blender with a rubber spatula once or twice. Always turn off your blender before you open it up and scrape down the sides.
• Use the tamper that your Vitamix comes with to keep everything moving. You can use it as you’re blending. Rotate it in a circular motion in the direction the blades move.
• When you’re ready to clean your Vitamix, add some warm soapy water to the container, put the lid back on and blend for a few seconds! This does most of the hard work for you before you clean everything in the sink. I don’t recommend putting your Vitamix in the dishwasher.
Ingredients
I designed these recipes to be actually doable for almost any kind of cook, so most of the ingredients will be familiar and readily available. There might be one or two that you haven’t heard of or used yet. In those cases, they will be available at your local health food store or online.
We will be using a variety of colorful fruits, vegetables, tofu, nuts, seeds and beans. I love rich flavors, so we will be incorporating lots of herbs and spices, too. This is a gluten-free cookbook, so the grains we use will be gluten-free pastas, flours and rices. If you don’t need to eat gluten-free, you can of course substitute gluten-full ingredients instead! As always: do what works best for you.
I always recommend finding the freshest produce (preferably organic and local) and the highest-quality dry goods available. Farmers markets, organic grocery shops and artisan food stores are excellent places to find the best quality ingredients. However, quality often
