1. Creamy Mushroom Risotto
Ingredients:
● 1 cup Arborio rice
● 4 cups chicken or vegetable broth
● 2 tablespoons olive oil
● 1 tablespoon butter
● 1 small onion, finely chopped
● 2 cloves garlic, minced
● 8 ounces mushrooms (such as cremini or shiitake), sliced
● 1/2 cup dry white wine (optional)
● 1/2 cup grated Parmesan cheese
● Salt and pepper to taste
● Chopped fresh parsley for garnish (optional)
Instructions:
1. In a medium saucepan, heat the chicken or vegetable broth over medium heat until simmering. Reduce heat to low to keep warm.
2. In a separate large skillet or saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
3. Add the sliced mushrooms to the skillet and cook until they are softened and golden brown, about 5-7 minutes.
4. Stir in the Arborio rice and cook for 1-2 minutes, stirring constantly, until the rice is lightly toasted.
5. If using, pour in the white wine and stir continuously until it has been absorbed by the rice.
6. Begin adding the warm broth to the rice mixture, one ladleful at a time, stirring frequently. Allow each addition of broth to be absorbed before adding more. Continue this process until the rice is creamy and tender, but still slightly firm to the bite. This usually takes about 20-25 minutes.
7. Once the risotto reaches the desired consistency, stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
8. Remove the risotto from heat and let it rest for a minute or two before serving. Garnish with chopped fresh parsley if desired.
9. Serve the creamy mushroom risotto hot, and enjoy as a delicious and comforting meal!
2. Lemon Herb Chicken
Ingredients:
● 4 boneless, skinless chicken breasts
● 2 lemons
● 3 cloves garlic, minced
● 2 tablespoons fresh parsley, chopped
● 1 tablespoon fresh thyme leaves
● 1 tablespoon fresh rosemary, chopped
● 3 tablespoons olive oil
● Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, combine the minced garlic, chopped parsley, thyme leaves, rosemary, and olive oil. Mix well to create the herb marinade.
3. Place the chicken breasts in a large dish or zip-top bag. Pour the herb marinade over the chicken, ensuring each piece is well coated. Let the chicken marinate for at least 30 minutes in the refrigerator, or preferably overnight for maximum flavor.
4. Once the chicken has marinated, remove it from the refrigerator and let it sit at room temperature for about 10-15 minutes.
5. Heat a large oven-safe skillet over medium-high heat. While the skillet is heating, season both sides of the chicken breasts with salt and pepper.
6. Once the skillet is hot, add the chicken breasts to the skillet. Sear the chicken for about 2-3 minutes on each side until golden brown.
7. While the chicken is searing, slice one of the lemons into thin rounds.
8. After searing both sides of the chicken, place the lemon slices on top of each chicken breast. Squeeze the juice of the second lemon over the chicken.
9. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
10. Once the chicken is done, remove it from the oven and let it rest for a few minutes before serving.
11. Serve the lemon herb chicken hot, garnished with additional fresh herbs if desired. Enjoy your flavorful and aromatic dish!
3. Beef Stew with Root Vegetables
Ingredients:
● 1 1/2 lbs (680g) beef stew
