    Lane Cake

    Ingredients:

    For the Cake:

    ● 1 cup (2 sticks) unsalted butter, softened

    ● 2 cups granulated sugar

    ● 4 large eggs

    ● 3 cups all-purpose flour

    ● 1 tablespoon baking powder

    ● 1/2 teaspoon salt

    ● 1 cup whole milk

    ● 1 teaspoon vanilla extract

    For the Filling:

    ● 1 cup dried raisins

    ● 1 cup chopped pecans

    ● 1 cup sweetened shredded coconut

    ● 1/2 cup unsalted butter

    ● 1 cup granulated sugar

    ● 1 cup evaporated milk

    ● 4 large egg yolks, beaten

    ● 1 teaspoon vanilla extract

    ● 1/2 cup bourbon or whiskey (optional)

    For the Frosting:

    ● 2 cups heavy cream

    ● 1 cup powdered sugar

    ● 1 teaspoon vanilla extract

    Instructions:

    For the Cake:

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the milk.

Begin and end with the dry ingredients. Mix until just combined.

    Stir in the vanilla extract.

Divide the batter evenly among the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

    For the Filling:

In a medium saucepan, combine the raisins, pecans, coconut, butter, sugar, evaporated milk, and beaten egg yolks.

Cook over medium heat, stirring constantly, until the mixture thickens (about 10-12 minutes).

Remove from heat and stir in the vanilla extract and bourbon (if using). Allow the filling to cool completely before using.

    For the Frosting:

In a chilled bowl, whip the heavy cream until it begins to thicken.

Add the powdered sugar and vanilla extract. Continue whipping until stiff peaks form.

    Assembling the Lane Cake:

Place one cake layer on a serving plate. Spread a portion of the filling over the top.

Repeat with the remaining layers and filling, finishing with a layer of filling on top.

Frost the entire cake with the whipped cream frosting.

Optionally, garnish the top with additional chopped pecans or shredded coconut.

Refrigerate the Lane Cake for a few hours or overnight before serving to allow the flavors to meld.

Lane Cake is a delightful Southern classic that's sure to be a hit, especially for special occasions or celebrations!
