    Are all low-fat foods good for the body? Are there such things as good fat and bad fat? If so, how do we know? Is there an effective way to monitor daily fat intake?

    I'll do my best to answer all of these questions one by one as we progress through this book, but before that, let us know what's really fat first.

    More often than not, food with a high fat content is also high in calories, and we all know that eating food with too many calories can lead to weight gain or worse, obesity.

    Why choose a low fat diet?

    The main reasons for choosing a low-fat diet tend to be to help reduce overall calorie intake and improve cholesterol levels.

    To help achieve these goals, a low-fat diet should be properly balanced to include a healthy amount of vitamins and minerals.

    Breakfast

    Breakfast mashed potato pancakes

    A medium-sized potato is rich in vitamins and nutrients (such as carbohydrates, proteins, potassium, iron and vitamin C) and contains only 2% fat and cholesterol. Start the day right with these mashed potato pancakes.
