    1. Scrumptious Pasta With Sardines

    Yield: Makes 4 Servings

    Ingredients:

    1 (16 ounce) package spaghetti

    3/4 cup olive oil, divided

    6 cloves garlic, minced

    2 (4 ounce) cans sardines packed in olive oil, drained

    1 cup seasoned bread crumbs

    1/3 cup freshly grated Parmesan cheese

    1/4 cup chopped fresh parsley

    1 teaspoon ground black pepper

    additional Parmesan cheese for serving (optional)

    To Make:

    Step 1. Bring a large pot of lightly salted water to a boil.

    Step 2. Add the spaghetti, and cook until al dente, or 8 to 10 minutes.

    Step 3. Drain, and rinse under cold water.

    Step 4. Toss with 1/4 cup olive oil, cover and keep warm.

    Step 5. Place another 1/4 cup olive oil in a skillet, and heat over medium heat.

    Step 6. Stir in the garlic, and cook just until golden, 2 to 3 minutes.

    Step 7. Add the sardines, and cook 1 minute more.

    Step 8. Stir in the bread crumbs and 1/3 cup Parmesan cheese.

    Step 9. If necessary to give the mixture a crumbly texture, stir in the remaining 1/4 cup of olive oil.

    Step 10. Stir in the parsley and pepper, and remove from the heat. If desired, serve with additional Parmesan cheese.

    2. Delish Pasta with Shrimp

    Yield: Makes 4 Servings

    Ingredients:

    1/2 pound spaghetti

    4 tablespoons butter, divided

    2 shallots, minced

    1 cup diced mushrooms

    1 cup grape tomatoes, quartered

    2 cloves garlic, minced

    salt and ground black pepper to taste

    1 pound uncooked medium shrimp, peeled and deveined

    1/4 cup white wine

    2 tablespoons fresh lemon juice

    2 cups torn fresh spinach leaves

    1/2 cup half-and-half cream

    1/4 cup shredded Parmesan cheese

    To Make:

    Step 1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.

    Step 2. Stir in the spaghetti, and return to a boil.

    Step 3. Cook, uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 12 minutes.

    Step 4. Drain; toss with 2 tablespoons of the butter.

    Step 5. Melt the remaining 2 tablespoons butter in a large skillet over medium heat, and cook and stir the shallots and mushrooms until the mushrooms are tender, about 5 minutes.

    Step 6. Stir in the grape tomatoes and garlic, season with salt and pepper, and cook and stir until tomatoes are heated through, about 3 minutes.

    Step 7. Add the shrimp, and cook until the shrimp just begins to turn pink, stirring occasionally.

    Step 8. Stir in the white wine and lemon juice, reduce the heat to medium-low, and simmer until shrimp are opaque, about 5 minutes.

    Step 9. Stir in the spinach; once spinach has wilted, stir in the half-and-half and Parmesan cheese.

    Step 10. Simmer until all ingredients are heated through and the sauce is slightly thickened, about 5 minutes.

    Step 11. Serve over the cooked spaghetti.

    3. Savory Linguine with Seafood and Sundried Tomatoes

    Yield: Makes 8 Servings

    Ingredients:

    1 pound linguine pasta

    1/2 cup olive oil

    1/2 cup butter

    4 cloves garlic, minced

    1 pound bay scallops

    1 pound medium shrimp - peeled and
