BHASKAR BORA

We cannot control what the universe throws at us but how we react to those curve balls defines who we are and what we make out of our lives. Just when life seemed rosy and the sun was shining, he sustained a severe spinal cord injury in July 2019 following an operation, which left him with paralysis of both legs, a non-functioning right hand and a long stay in the hospital, eventually leading to a forced medical retirement from his medical career and a wheelchair in place of a sports car. He had to undergo multiple operations but is now permanently disabled. Two months after his injury he was also diagnosed with cancer of the Thyroid for which he needed further operations. Poorer financially but richer in life experiences, he is now a voice for the disabled. He wrote his first book 'The Second Chance in Life' as an honest reflection of his life experiences to motivate people that every adversity can still be turned into an opportunity. That it is important to be filled with gratitude and appreciation for all the things that we take for granted. He also blogs on his websites www.drbhaskarbora.com & www.thesecondchanceinlife.com In his own words, he says "The sun was shining on my life, everything looked rosy. Money was plenty and worries scarce. I had a dream career, a beautiful family, the blessings of my parents and the love of my friends What more could I ask for? When things go well in life, you assume you are in control. I thought so too. But when faced with unprecedented situations and overwhelming emotions, it is important to maintain trust in yourself and keep moving forward. When storms come, an eagle flies higher in order to rise above the turbulence, while a mouse hides in a corner. I had to become that eagle and soar higher, not be cornered and crushed in the storm of life. Believing in myself was the only way. Maybe this was a lesson. Maybe this was a lesson to find a bigger purpose and achieve a bigger dream. Miracles, big and small, happen every day but often we are not receptive enough to understand and appreciate them. My books are a testament to all the different things that I have learned and experienced and now want to share with my readers honestly and practically. Join me in this journey."

A Journey Through the Flavors of India

Indian cuisine, a melange of vibrant colors, intricate aromas, and diverse flavors, is a testament to the country's rich cultural tapestry. Spanning thousands of years, the culinary traditions of India are as varied as its geography and as diverse as its people. From the snow-capped mountains of the Himalayas to the sun-kissed beaches of Kerala, every region boasts its unique culinary identity, shaped by local ingredients, cultural influences, and historical events.

    Introduction

Welcome to 100 Easy Indian Recipes to Make at Home. This book is your gateway to exploring the vast and exciting world of Indian cooking. Whether you are a seasoned cook or a beginner in the kitchen, you will find recipes that are easy to follow, nutritious, and budget friendly. My name is Bhaskar Bora, and I am thrilled to take you on this culinary journey.

Growing up in India, food was not just sustenance; it was a celebration of life. Every meal was an occasion to come together, share stories, and create memories. I have fond recollections of my mother preparing elaborate meals during festivals, the aroma of spices filling the air, and the joy of tasting those exquisite dishes. This book is a tribute to those cherished moments and a way to bring the magic of Indian cuisine into your home.

A Brief History of Indian Cuisine

Indian cuisine has evolved over millennia, influenced by a myriad of cultures and civilizations. The Indus Valley civilization, one of the world's oldest, laid the foundations of India's culinary traditions with their knowledge of agriculture and food storage techniques. The arrival of the Aryans introduced new grains like barley and wheat, which became staples in the Indian diet.

The influence of the Maurya and Gupta empires further enriched Indian cuisine. During these periods, the cultivation of rice and the use of various spices became widespread. The spread of Buddhism and Hinduism also played a significant role in shaping dietary habits, emphasizing vegetarianism and the use of dairy products.

The medieval period saw the advent of the Mughal Empire, which brought a profound transformation to Indian cooking. The Mughals introduced Persian culinary techniques, such as the use of dried fruits, nuts, and aromatic spices like saffron and cardamom. They also popularized dishes like biryani, kebabs, and rich, creamy gravies that remain central to Indian cuisine today.

The colonial era, particularly the British Raj, added another layer of complexity to Indian food. The British influence led to the fusion of Indian and Western culinary practices, giving rise to dishes like the Anglo-Indian curry and the ever-popular chicken tikka masala.

    The Popularity of Indian Cuisine

In recent decades, Indian cuisine has gained immense popularity worldwide. Its appeal lies in its diversity and the harmonious balance of flavors—spicy, sweet, sour, and savory. The global love for Indian food can be attributed to its ability to cater to various dietary preferences, from vegetarian and vegan to gluten-free and meat-based diets.

Indian restaurants have sprung up in major cities across the globe, and Indian spices have found their way into mainstream supermarkets. Dishes like butter chicken, samosas, and dosas have become household names, enjoyed by people of different cultures and backgrounds.

Moreover, the health benefits of Indian food have contributed to its growing popularity. The use of turmeric, ginger, garlic, and other spices known for their anti-inflammatory and antioxidant properties has made Indian cuisine a favorite among health-conscious individuals.

    A Culinary Adventure Awaits

This book is divided into several chapters, each dedicated to a specific type of meal—breakfast delights, wholesome lunches, delectable dinners, snack attacks, refreshing drinks, sweet treats, and festive recipes. Each recipe includes nutritional values, calorie counts, and the cost of making the dish, making it easier for you to plan your meals.

In the following pages, you will discover the secrets behind making some of the most beloved Indian dishes. From the comforting warmth of masala chai to the irresistible sweetness of gulab jamun, this book will guide you through the process of creating authentic Indian meals in your kitchen.

Embark on this culinary adventure and let the flavors of India bring joy and excitement to your dining table. Whether you are cooking for yourself, your family, or hosting a festive gathering, these recipes will help you create memorable meals that celebrate the essence of Indian cuisine.
