We cannot control what the universe throws at us but how we react to those curve balls defines who we are and what we make out of our lives. Just when life seemed rosy and the sun was shining, he sustained a severe spinal cord injury in July 2019 following an operation, which left him with paralysis of both legs, a non-functioning right hand and a long stay in the hospital, eventually leading to a forced medical retirement from his medical career and a wheelchair in place of a sports car. He had to undergo multiple operations but is now permanently disabled. Two months after his injury he was also diagnosed with cancer of the Thyroid for which he needed further operations. Poorer financially but richer in life experiences, he is now a voice for the disabled. He wrote his first book 'The Second Chance in Life' as an honest reflection of his life experiences to motivate people that every adversity can still be turned into an opportunity. That it is important to be filled with gratitude and appreciation for all the things that we take for granted. - 1 cup poha (flattened rice)
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 onion, finely chopped
- 1 green chilli, finely chopped
- 1 small potato, peeled and diced
- Salt to taste
- 1 tablespoon lemon juice
- Fresh coriander leaves, chopped
- Grated coconut for garnish (optional)
- Sev (crunchy chickpea noodles) for garnish (optional)
Process of Cooking
1. Preparation: Rinse the poha in a colander under running water. Drain and let it sit for a few minutes to soften.
2. Tempering: Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Add cumin seeds and sauté until aromatic.
3. Sautéing: Add the chopped onions and green chili. Sauté until the onions turn translucent.
4. Adding Vegetables: Add the diced potato and turmeric powder. Cook until the potatoes are tender.
5. Mixing Poha: Add the softened poha to the pan. Season with salt and mix well. Cook for a few minutes until the poha is heated through.
6. Finishing: Turn off the heat. Add lemon juice and mix well. Garnish with chopped coriander leaves, grated coconut, and sev if using.

- Salt to taste
- Fresh coriander leaves, chopped
- Lemon wedges for serving
Process of Cooking
1. Roasting Semolina: Dry roast the semolina in a pan over medium heat until it turns light golden and aromatic. Set aside.
2. Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.
3. Sautéing: Add the chopped onions and green chili. Sauté until the onions become translucent.
4. Adding Vegetables: Add the diced carrot and green peas. Cook for a few minutes until the vegetables are tender.
5. Adding Water: Add 2 cups of water to the pan and bring to a boil. Add salt to taste.
6. Mixing Semolina: Gradually add the roasted semolina to the boiling water, stirring continuously to avoid lumps. Cook until the semolina absorbs the water and the upma reaches the desired consistency.
7. Finishing: Turn off the heat. Garnish with chopped coriander leaves. Serve hot with lemon wedges.
