Who does run your food truck? The fireman is the person that jump from problem to problem tossing water on the flames sometimes leaving a smoldering issue that will raise its ugly head at the wrong time. Or perhaps a manager is running the show. One of the smartest restaurant operators I know, Mark Ordway, used to say "restaurant managers often are given 70 one minute tasks to perform every hour." I guess that is why they are called managers they manage to get things done! Maybe you are lucky enough to have a real leader. One that takes responsibility for what happens in the store every day.
